APPLESAUCE MUFFINS

There is nothing better than the smell of fresh applesauce muffins in the morning!

For Muffins

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon ground allspice
  • ¼ teaspoon freshly grated nutmeg
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 cup packed light brown sugar
  • 1 stick (1/2 cup) plus 3 Tablespoons unsalted butter, melted
  • 1 cup Old Virginia Applesauce (any flavor)
  • 1 cup walnuts, coarsely chopped
  • 1 small apple (Granny Smith), chopped into small pieces
  • ¼ cup raisins

For Topping

  • 2 Tablespoons granulated sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon freshly grated nutmeg

Directions

Preheat oven to 400°. Grease a muffin pan (1/2 cup each). In a medium bowl, sift together flour, baking powder, baking soda, spices and salt. In a large bowl, whisk together eggs and brown sugar until thoroughly combined. Add melted butter in a steady stream as you continue mixing. Whisk until mixture is creamy. Stir in applesauce and then fold the flour mixture into the egg mixture just until moistened. Stir in chopped apples, raisins and nuts and divide batter into the greased muffin cups.

For topping: Stir together all topping ingredients and sprinkle on top of each muffin. Add some larger walnut pieces on top as garnish. Bake until muffins are puffed and golden, about 20 minutes. Cool in pan on a rack for 5 minutes and remove muffins from pan and cool slightly.
